I found this one while wandering the net. This page is for preservation and my notes/modifications.

Ingredients
White Rice (1c)
Chicken (1lb) [can be frozen due to the nature of the Instant Pot]
Chicken Broth (1 can or ~1 cup)
Onion (1lg) [Green onions could work nice here instead of the standard yellow lad]
Black beans (1 can, drained) [I suppose fresh would work, but I don't know how to do that]
Corn (1 can, drained)
Chopped green chiles (1 can) [just thought of this now: fresh chiles might be awesome]
Salsa (1c) [any varity will do]
Taco Seasoning (1 pkg)
Shredded Cheese (1c) [not really needed, but adds nice texture]
Other seasonings as you see fit. It's kinda like chili, so season like that.
Directions
1. Plop everything but the rice and cheese into a countertop pressure cooker. I recommend chopping the onion, but you do you. Give a good stir.
2. Pour the rice in an even layer on top, without stirring it in. Supposedly, this helps with the _burn_ warning on later model Instant Pots. Dunno, it's not a problem on the one I use.
3. Pressure cook for 10 minutes, then quick release at the end of the cycle.
4. Stir in cheese.
5. c o n s u m e... I like to eat this with some plain corn chips. Fritos should be an excellent pairing too.
