Maine Baked Beans

- 2 pounds jacob cattle beans
- 1/2 lb salt pork
- 1/4 cup sugar
- 1/2 - 2/3 cup molasses
- 2 tsp dry mustard
- 1/2 tsp black pepper
- dash of salt
- 1 medium onion

Pick over beans and soak overnight in cold water.

Parboil beans until skins crack when blown upon, drain.

Place halved onion in bottom of pot and add beans.

Score salt pork 1/2" deep, add to top of bans.

Mix sugar, molasses, mustard, pepper and salt with 1 
pint boiling water, pour over beans to cover, add more water as necessary.

Bake 6+ hours at 300 F

Serve with brown bread or johnnycake.
