Dry Jerk Seasoning

      1 tb Onion flakes                        2 ts Sugar
      1 tb Onion powder                        1 ts Coarsely ground black
      2 ts Ground thyme                             Pepper
      2 ts Salt                                1 ts Cayenne pepper
      1 ts Ground allspice                     2 ts Dried chives or green
    1/4 ts Ground nutmeg                            Onions
    1/4 ts Ground cinnamon                

This seasoning mix is excellent to have on hand to sprinkle on cooked or uncooked fish, vegetables, or snacks. To increase the heat, add more cayenne. Mix together all the ingredients. Store leftovers in a tightly closed glass jar. It will keep its pungency for over a month. Yield: 5 Tablespoons.
