I looove fridge clean out curries. When there are a ton of veggies that are about to go bad in the fridge, I turn it into an easy and delicious curry dish. I liked this particular fridge curry because the variety of ingredients that I ended up using on it.

First, mise en place: Wash and cut the carrots, raddish greens, bok choy, ginger, and onions.
Using medium-high heat, heat up the coconut oil in a large pot then sautee the ginger, onions, massaman curry paste, and anchovy paste for a bit. After that, add in the other vegetables and sautee until things look a bit wilty.
Add in the coconut milk and wait until it boils. Lower the heat and let it simmer for, say, 10 mins. Add in the tilapia and cook it for another five.
The curry isn't salted yet so we add some fish sauce. Add as much or as little as you like. Feel free to add some anchovy paste as well if you prefer that.
Serve with rice!
