The Conversations client on Android doesn't seem too bad, and I can set OMEMO to be on by default with it at least...

Yes, the problem is that Conversations is very nearly the only good client. There are a couple of decent desktop clients, but woe unto you if you want to participate in an encrypted conversation on both desktop and mobile.
