For current running show I can’t recommend Demon Slayer enough. It’s a great story with incredible animation that just oozes creativity. And I agree with Solderpunk — if you haven’t seen Evangelion you need to watch it now. In my opinion, it’s one of the best and most intriguing sci-fi shows ever. You just have to roll with the WTF-ness of it and consult the wiki when you’re done. 🤯

Thought of a few I overlooked in my earlier post.
For older stuff, try the Yokohama Kaidashi Kikō OVAs. The manga is better, or rather, more complete. It is being officially published in English as of earlier this year, by Seven Seas Entetrainment. Rejoice!
Another more recent series I quite enjoyed was ReLIFE. It has a slightly "out there" plot for my tastes (though it's absolutely tame by modern day standards), but its actually very well done.
+1 for YKK. It's very soothing.
Spice and Wolf is being remade soon.

+1 for “A Place Further Than The Universe”. Has the same vibe as Yuru Camp.
Furthermore
- “Orange” and “The Girl Who Leapt Through Time” for the time travel theme
- “Moribito: Guardian of the Spirit” for the likeable characters fighting for the greater good in a medival Japanese setting
- “I Want to Eat Your Pancreas” for the heart break
- “Death Note” for the suspension
- “Tokyo Ghoul” for the goriness contrasted with the human condition
- “Space Battleship Yamato 2199” for the space travel and fight for survival, and the best opening song ever. I always skip those after the first time, but this – never.

The only things mentioned that I've seen before are:
Battle Programmer Shirase is a good choice if you are into programming.
If you're interested in yuru camp may I suggest some of my favourite slice of life anime: hidamari sketch, tamayura, gochiusa and sketchbook full colors. Warning these may not be too deep in the "show about nothing" level for beginners.
Toradora is very sweet, I highly recommend it if you enjoy cute romantic plots. Elfen Lied is quite beautiful and sad, and has an impressive intro and OST.
If you want something older and cheesier, Vampire Princess Miyu is fun.
