Shortbread

Found deep in my emails (10 years back). Recipe is from a contractor I used to work with, it's his family recipe on the Scottish side.

I can vouch for how good it is!

Ingredients

1 egg, 1 lb butter, 2lbs flour, .5 lb sugar

Steps

Get butter to room temperature (essential)
Cream butter (by hand is the official way)
Add egg
Mix
Add 1 tsp salt
Mix with flour until very small butter/flour particles
On an island, gather up dough, and grind with meaty part of hand into the island
Repeat until the dough has the consistency to be rolled out
Roll out dough at approx 1/3" thickness
Bake at 225 for 1 hr
