Beans and Greens

10 cloves garlic, minced
1 stick of pepperoni or 1/4 lb pancetta, diced
1 can little white beans or cannelinni beans
1/2 head escarole, kale, radichio, endive, or other bitter green
white wine
dried oregano
red pepper flakes
olive oil
Heat a bit of olive oil in a skillet over medium heat. Add meat, cook to render fat. Add garlic, oregano, and red pepper, stir until garlic is soft and fragrant. Add drained beans, stir and heat through. Add greens and a splash of white wine if desired, cook until greens are at desired tenderness (we like them a bit al dente). Serve with parm.

Dried bean variant: 1/2 cup dry small white beans, soaked for 5-8 hours. Drain, refill instant pot with water. Set for 8-9 minutes.
