Meal Prep Review 4-24 - 4/29

Frozen Breakfast Burritos:

Scrambled egg, cheddar cheese, cream cheese, scallion, salsa, green onion, all in a whole wheat tortilla. Wrapped with all ingredients cold, wrapped in foil and frozen. Made 10 for the 5 day work week.

Thoughts: Nasty. Did not taste great. Ate them anyways because it was 3am and I had to go to work. I still have four in my freezer that I'll undoubtedly still eat this week because I know myself. I want to make a frittata this week but I'm still disgusted by having eaten only frittata for like three months when I worked at the zoo.

Tuna Pasta Salad:

Rigatoni pasta, garlic, fresh oregano, olive oil, lemon juice, 2 cans of tuna, artichoke hearts, green onion, feta. Combine.

Thoughts: DELICIOUS. Looked forward to lunch every day. A couple cups was filling. I want to make this again sometime (but not this week so I don't get bored of it).

Chicken Soup:

Chicken broth, chicken schmaltz, chicken, chickpeas, can of tomatoes, onion, garlic, shredded carrots, arugula, curry powder, bay leaf, cinnamon stick, dried chilies. Cook the schmaltz out of the chicken skins and then brown the chicken in it. Cook down the aromatics in the schmaltz then add the vegetables/beans, then broth, then chicken, then arugula.

Thoughts: MASTERPIECE so damn good. Mmmm. The cinnamon really enhances it. I still have quite a bit left that I'll eat throughout the day.

Overall thoughts on meal prep this week:

Successful, but breakfast sucked. Total food expense was about $70.
