600 g rolled oats 150 g pancake mix 100 g brown sugar 150 g butter 450 g water 250 g peanut butter 2 eggs
1. Mix together the oats, pancake mix, and brown sugar.
2. Melt the butter.
3. In a separate bowl mix the melted butter, water, eggs, and peanut butter together.
4. Add the wet ingredients to the dry ingredients and mix well to form a thick dough.
5. Spread the dough evenly on your baking stone or in your baking pan. Slice the unbaked dough into bars or wedges.
6. Bake at 325 for 70 minutes, turning the pan halfway after 35 minutes to bake more evenly.
7. Store immediately in airtight containers, while the oatcakes are still hot.
Some folks think these are more like peanut butter cookies with oatmeal, rather than oatcakes. Reduce the amount of peanut butter and/or sugar if you'd like that to be less true.
