why would I. I'm using aerc (https://aerc-mail.org) and I was just
really confused when I saw that, hence why I asked. I think you can turn
off HTML in most browsers now.
In Gmail there is an option for plain text mode. When you're composing an e-mail, just click on the "three dots" menu (lower right, next to the trash can) and select "plain text mode".
