If you don't want your computer to automatically connect to Ethernet on startup you can just disable autoconnect for it.
This, however, means that if you unplug the cable (or reboot your router...) while the connection is enabled it won't automatically reconnect once it's available again (duh...) After being mildly annoyed by this fact for months and trying to figure out a way to only make it reconnect automatically if it wasn't disabled manually while still avoiding auto activation on boot I finally re-read the NetworkManager.conf manpage and noticed the ignore-carrier option. This will surely end up causing me some more headaches and annoyance in the future but for now, setting its value to true for my ethernet interface seems to do the trick (by not deactivating the connection even if the link disappears) ¯\_(ツ)_/¯
