Cold Start

Cut some fresh onion and ginger root.

Mix everything together. Add maybe a splash of rice or white wine vinegar. If the onion is too potent maybe use less or soak it first in some cold water or vinegar.

The most recent batch of salmon jerky turned out very tender. It was a pretty good cut of salmon. Other jerky may need some soaking to soften it up.

Raw onion is reputed to be healthy, and it may be good practice to know how to make cold meals in the event that food or energy prices get too high.
