Apologies if I'm being dense, but what does the MISSED bit (in the game display, above the score) mean?

I was a bit confused at first too. It's just the words that could fit the puzzle but are not an answer. So they're ~missing~ from the 'valid words' list.
No apologies needed - missed words are words that should've been included in the game but were not. If you find a word that should be there, send me an in-game message by starting an entry with a period -- like .hello.
Generally, words that are in Merriam-Webster dictionary should be in the game unless they are Scottish (or other dialectals), or too technical. It is a bit subjective.
Occasionally you will see some words marked as 'Error': these are words that should not be in the game but slipped in. Most likely these are mis-spellings or country names or such.
