Lemon Baked Potatoes (Patates Lemonates Fournou)
from _Papa's Art of Greek Cooking_
serves 4-6
Ingredient List:
- 4 large potatoes (russet)
- 1/2 cup lemon juice
- 1 cup extra virgin olive oil
- 1 tbs oregano
- 4 cloves garlic, minced
- salt and pepper to taste
- paprika
Oven: Preheat oven to 425F
- Peel and wash the potatoes, cut them lengthwise into quarters and place in a bowl.
- Pour the lemon juice over them and toss. Add the salt, pepper, minced garlic, oregano and oil. Mix well.
- Allow to marinate for an hour or more.
- Arrange the potatoes in one layer in a baking pan. Pour over the marinade and sprinkle paprika on top.
- Cover the pan tightly with foil and put on the lower rack of the oven. Bake for approximately 25 min, initially.
- Uncover and bake another 30 min or until the potatoes are tender and crispy on top.
- Remove from the oven and serve hot.

Notes:
So good they are delicious cold the next day, as well.
Honestly, you should use even more lemon, maybe 3/4 cup. Also, salt them enough.
