1. set aside 5 tablespoons of milk, heat the rest of the milk.
2. beat the eggs with the sugar until frothy.
3. mix starch with the set aside milk until smooth, and add to the egg-sugar mixture.
4. add some of the hot milk to the egg mixture, stirring constantly.
5. then add this to the remaining hot milk, again stirring constantly.
6. let everything boil briefly.
7. After about a minute, the mixture will begin to thicken. Remove the pot from the heat and stir some more. Then place in ice water to cool.
8. Stir the VLA every few minutes to prevent a skin from forming. It is best to stir until no more steam escapes when stirring.
9. Now you can pour the VLA into glasses or bowls and continue to chill in the refrigerator.
VLA can also be enjoyed warm, but traditionally it is served cold.
