What kind of emulation do folks do? I'm currently using a Retroid Pocket 2 running everything up until Dreamcast. I'm trying to get PICO-8 to run on it, but it's being difficult for some reason...

I've got a RG353V arriving in a couple days actually! Really excited for it!

On Mac OS I tend to use OpenEmu, which will emulate a list of systems too long to mention here. On the hardware side, I'm sorely lacking good options atm.

I got an Orange Pi working with RetroOrangePie (an adaptation of the famous RetroPie) and it works very well. I can even play PS1 games. Haven't tested N64 nor Dreamcast, but I suspect it will be far more that what this tiny comp can handle.

I do a bit of emulation on the Steam Deck. Switch games run great through yuzu, and 3DS through citra! Nice to have a portable system that can run just about anything.

I use my Analogue Pocket pretty frequently (although I guess FPGA isn’t really emulation). Everything else I play on real hardware (mostly my 3DS)

It kind of depends on my mood. I have an Odroid and Odroid Go Advance that I play on a good bit. I've also played a lot on my PSP. The systems I play the most are probably the 8-bit through 32-bit generation systems. NES/GB/GBC especially have a lot of homebrew games still getting made that are fun to try out.
