soy-braised soybeans. korean inspired.
1. soak dry soybeans for about as long as you've got to soak them. overnight is good. this recipe covers about a cup of dry beans.
2. drain and add to pot. add water to cover. heat until boiling (skim the gunk), lower to simmer for half an hour covered.
3. drain and add back to pot. add a little under 1/2 cup of soy sauce, a good splash of mirin, 1tbsp sesame oil (I didn't have sesame and used coconut, still good), chopped garlic, chopped red onion, chopped chili pepper if you want, and more honey than you think you need. no seriously more than that.
heat to bubbling, then lower to simmer for half an hour to 40 minutes covered and stirring occasionally.
4. uncover and raise heat a little. stir to reduce sauce until it's syrupy. you'll probably need to add more honey, just accept it.
product is VERY salty and nicely sweet. good as a rice mix-in and side dish in general, not a main event kind of thing.
