About 45 or 50 pancakes.
(500 grams) buckwheat flour
(2 teaspoons) baking soda
(1 teaspoon) salt
(1 liter) cultured buttermilk, shaken
(4 or 5) eggs, large
Mix dry ingredients. Mix wet ingredients separately. Combine wet and dry until just mixed. Pour on to griddle about 0.5 dl at a time. Turn when bubbles form.
Work through the batter quickly because the baking soda and cultured buttermilk start to neutralize each other from the moment they are mixed.
Can be made in a half or quarter batch easily.
