Potatoes

Starchy Potatoes

• A suitable amount of starchy potatoes, cut small
• Some bread crumbs
• Sweet peas
• One shallot, diced
• A bit of parmesan cheese
• Chicken stock
• Some unsalted butter, cut small and well distributed
• Balsamic vinegar
• Soy sauce
• Some tarragon

Nuke the starchy potatoes in the microwave for about five minutes. Spread them out on a plate so they do not stick into a mass.

Mix everything together.

Braise in the oven for maybe 30 minutes at 350F. May need the top off the pot to dry it out at the end, if you want the bread crumbs to be less soggy.
