This is my recipie I picked up off reddit for some delicious and warm lenit soup that is totally 100%
vegan.
2 Cups lentils
Half a can of unsweetend coconut milk
1 cup of carrots
1 cup of chopped poptatos
1 table spoon of cumin
1 table spoon of chili powerder
1 table spoon curry
1 cup choped onions
1/2 cup of chopped garlic
1/2 cup of chopped ginger
1 tea spoon oil
1 bottle of veggie stock
Boil your lentils and pre soak your potatoes.
Boil your lentils for about 30 minutes or until they are ready to eat.
While your lentils are boiling go ahead and get a large pot and put your oil in it.
Add your chopped onions, your ginger, and your garlic and saute them until they are golden brown.
After you saute your garlic, onions, etc etc. Add your spiceys and cook your suate'd veggies in them for about 5 minutes or until you think they are ready.
Add your carrots and your potatoes into your mix then add your vegitable stock.
The recipe I read off reddit calls for 4 cups or so, but, I use nearly the whole bottle and don't dilute it with water. I find that leaves the most flavor. I typically add enough until it's half an inch or so over the top of all the vegitables.
Let that boil for about 30 minutes. Your lentils should just about be done at this point. I typically end up with them needing anywhere between 10 - 5 more minutes of cooking
Add lentils into the stew and sturr. keeping sturring so the bottom doesn't burn.
Let this cook for another 20 - 25 minutes, or, until your potatoes are soft enough to eat.
Remove fromt he stove and add the unsweetend coconut milk and Ta da! All done!
