I made gnocchi today! If you don't know gnocchi is just some kind of round ball of mashed potatoes with flour and egg. It's served with some tomato sauce and cheese on top.
The recipe is simple:
- 500 grs of potatoes
- 1 egg
- 200 grs of flour
- Salt
I didn't have to bake potatoes because for some reason I already had baked potatoes. Whether you have them already or bake them make sure to mash them well and when you're sure your mashed potatoes have no lumps let the mix rest and cool off (because we don't wanna cook the egg just yet). At that point I added the egg and mixed well.
As the mix of potatoes and the egg is incorporated add flour carefully until I got a dough that doesn't stick to your hands too much (although it's not easy because potatoes have more moisture) and started making small balls of dough which were taken to the fridge until today. I tossed them into a pot with hot water and when they started floating they were ready. I served them with tomato sauce.
I think I didn't add enough salt but other than that I didn't notice they had lumps. Pretty good. If you have any advice about making the dough faster. I struggled to make it less sticky and I think used more flour than necessary.
