pitabread shared this recipe with me over IRC. I wanted to be sure and have a record of them saved somewhere.

aquafaba burger buns ~ pitabread

10g of yeast

30g of sugar

1 c. alt milk

4 T. canola oil

100 ml aquafaba

12 g fine salt

800 g all purpose flour

sesame seeds and poppy seeds - to decorate the tops

In a small bowl, mix the yeast with 200ml of lukewarm water, and add the sugar and mix. Leave to proof for about 5 minutes. Meanwhile, measure out the other ingredients. Add the alt milk, oil, aquafaba, and salt to the liquid. Beat well with a whisk for about a minute. Add in the flour, mix well, and knead for about 5 minutes, until a dough is formed and isn't too sticky. Place the dough in well-oiled bowl, and cover it with either plastic wrap or a damp kitchen towel, and let it rise in a warm place for about an hour. Once the time's elapsed and it's risen well, punch it down, and divide the dough into either 8 large burns, or 12 medium-sized buns. Form balls in well-floured hands, turning the dough into itself. Place the dough balls onto a cookie sheet covered with parchment paper or a silpat. Let them rise again in a warm place, covered, again for about 30 minutes. Preheat the oven to 375°F, swipe the tops of the buns with aquafaba with a brush, top them with sesame seeds and/or poppy seeds, and bake them for about 15 minutes. Let them cool a bit before eating.
