Baked Home Fries

Prep time: 10 minutes
Cook time: 40 minutes
Servings: 4

Ingredients

~3 lb od potatoes
1 tsp garlic powder
1/4 cup of olive oil

Instructions

preheat the oven to 425 degrees
Wash and peel the potatoes
Cut the potatoes into 3/4 in. cubes
In a large bowl toss the potatoes and garlic in the olive oil. Coat all the sides of the potato cubes with oil.
Gently lift the potatoes from the bowl and lay in a single layer onto a baking pan.
Place in over.
After about 20 minutes (when tops are brown) turn over the potatoes to brown the other side.
Check after 15 more minutes. The potatoes should be soft. If not continue baking checking occasionally.

Notes

Baking time depends on the type of potato and the cube size.

I omitted adding salt and pepper prior to baking. You may want to add that step.
