opportunistic sourdough crepes. when feeding sourdough starter, and not baking with it. make these rather than discarding the excess.
egg 1 sourdough starter 100 g water some salt pinch
if you would rather this be vegan, don't include the egg. compensate with more water.
1. crack an egg in a bowl.
2. add 100g of sourdough starter discard.
3. mix until well combined. consistent color. consistent thickness. consistent texture.
4. add water until it's thinner than you expect it should be. often times this will be a very small amount of water. it depends on the hydration of the starter. in any case the result should be very very thin.
5. add some salt. a pinch. or two.
6. cook in a skillet. with butter. or oil. or if a non-stick pan, nothing. a bit of time on both sides. makes three crepes. scale up for more.
