They are just dumps of the contents of 140K 16-sector 35-track Apple II
diskettes.

This is OS dependent: does the .dsk image contain a DOS 3.3 disk?  An
Apple Pascal disk?  An Apple CP/M disk?  A ProDOS disk?  A Flex disk?
 
On  http://hotel04.ausys.se/pausch/apple2  you'll find portable C source
code to FID, a little utility which allows you to view and optionally
extract the contents of a DOS 3.3 .dsk image.  It compiles on any ANSI C
compiler.
