pumpkin soup
pumpkin soup is good. very autumn-y. considering how cheap pumpkins are in the fall, i'd definitely recommend trying this soup!
ingredients
- 2 Tbsp olive oil
- 2 onions, finely chopped
- 1 tsp salt
- 8.5 cups of diced pumpkin
- 700ml vegetable stock
- 200ml cream.
instructions
- heat oil in a pot
- fry onions until soft
- add pumpkin, cook until it starts turning gold
- add vegetable stock and salt
- bring to a boil, then simmer for 10 minutes.
- add cream, bring to another boil.
- blend with a hand blender. a potato masher works in a pinch.
All done! you can serve it with toasted pumpkin seeds or other fall-y things, for that double comf vibe!
