Preheat your oven to 350°F and grease a 9" loaf pan.
In a medium-sized mixing bowl, mash 350-400g of bananas (3-4 bananas), add ⅓ of a cup of neutral flavoured oil or applesauce, 1 teaspoon of vanilla extract, and mix well. Then add 210g of flour (all-purpose, whole wheat, spelt are all okay), 75g of sugar, 1½ teaspoons of baking powder, ½ teaspoon of baking soda, a pinch of salt, optionally 1 teaspoon of cinnamon, and mix until the flour is combined (do not overmix). The batter will be slightly thick and some lumps are okay. If the mixture is too thick, add up to 50mL of a milk or milk alternative.
Pour the batter into the loaf pan and bake for 50 minutes to 1 hour. When done, insert a toothpick in the top of the loaf and pull it out. If it comes out clean then the loaf is ready.
