Sardine Burger

This makes two patties, and is something of a work in progress.

Mash sardines, shallot, and bread crumbs together with a fork. Mix in the egg and form the patties. Cook on a skillet, etc.

The egg can be omitted in which case you'll get a very crumbly dry almost powder with browning from the skillet action. Maybe add that to a salad, or with yogurt?

For sardines in oil, you probably do not want to drain off the oil; otherwise, the patties will probably need a little oil added.

The shallot is probably not a good fit; it is too sweet. White onion might be a better choice. Otherwise the patties are pretty bland; sardines work better for me as a calzone filling. Maybe it needs a bit of vinegar, or garlic? Or really awesome other ingredients to distract from the bland meat slab?

If anything sardine burgers might be a way to sneak sardine past people who otherwise do not like sardines?
