Apples are usually readily available (Washington state accounts for something like 60% of the United States supply, or so the old web informs me) so for a morning meal one might (optionally) cook a sausage remove it from the pan, then cook some chopped apple in the sausage oil, possibly with a little additional unsalted butter, then add the kraut at the very end just to warm it up a little.
Green apples are good here; some red varieties will go too soft too soon after heat exposure, though there are some reds that remain crisp on cooking.
The pan could be used on a continued lower heat to produce fried eggs. Or, mix some chicken stock and apple cider vinegar and mustard powder and reduce that a bit in the pan for more flavor and to clean the pan up a bit.
