Black Bean Tacos

This is a favorite in my household. It is a comfort food.

• Prep time: 15 minutes
• Cook time: 10 minutes
• Servings: 4

Ingredients

• 1 tablespoon olive oil
• ½ small yellow onion, diced
• 1 garlic clove, minced
• 1 15-ounce can black beans, drained and rinsed
• ½ teaspoon cumin
• ¼ teaspoon smoked paprika
• 1/8 teaspoon cayenne pepper
• ½ teaspoon kosher salt
• Freshly ground black pepper, to taste
• ½ cup of salsa
• 1 tablespoon tomato paste
• 1 tablespoon water

Instructions

• Heat olive oil in a saucepan over medium-low heat; cook onion in hot oil until tender, about 5 minutes.
• Add the garlic, sautee until fragrant.
• Stir black beans, cumin, smoked paprika, cayenne pepper , salsa, tomato paste and water.
• Reduce heat to low and cook the mixture at a simmer until it thickens, 5 to 10 minutes
