Peppermint Oil

Make your own peppermint oil for the medicine cabinet.

Wash and crush a handful of peppermint leaves.

Put them in a screw-top jar and add 500 ml of extra virgin olive oil.

Place the jar on a sunny windowsill and let the oil infuse there for six weeks.

Then strain the peppermint oil through a sieve and pour it into dark apothecary bottles.

Store the oil in a cool dark place. Properly stored, the oil will keep for at least 12 months.
