Bread and Butter Pickle

So classic, so much sugar.

Works well with cucumber and also zuccinni's

Ingredients:

1 kg little cucumbers

1/2 yellow onion, sliced

2 red jalapeno pepper, sliced

3 tbsp sea salt

2 cups sugar

2 cups white distilled vinegar

1/4 cup water

1 tbsp mustard seeds

1 teaspoon celery seeds

1/8 tsp ground cloves

1/2 teaspoon turmeric

1 tsp black peppercorns

2 cloves garlic, sliced

Method:

Salt cucumbers, onions, chillis for 2+ hours
Wash well and drain.
Combine rest of ingredients and bring to boil.
Fill jars with cucumbers and pour liquid over.

For thicker mix add 1 tbsp of corn flour to 1 cup of vinegar and mix then add to the liquid and simmer till thick, add cucumbers to this mix and jar.
