Ratatouille Nicoise

Traditional french recipe for ratatouile, without oven.

To finish the left overs if any, reheat them in a pan and break eggs into it and cook. Voila !

Ingredients :

• 3 Tomatoes
• 2 Bell Peppers
• 2 Eggplants
• 3 Zucchini
• 3 middle sized onions
• 1 garlic clove
• 1 Bouquet Garni
• Olive oil, salt, pepper

Instructions:

• Peel and remove seeds from tomatoes then dice them
• Peel zuchini and eggplants then slice them
• Remove seeds from bell peppers and slice them
• Peel then mince onions
• In a large frying pan, heat up olive oil then saute the onions until golden.
• Add tomatoes and let them cook together for 3-4 mins, whisking with a wooden spoon. You should obtain some sort of puree.
• Add the garlic and season with salt and pepper.
• Add zuchini, eggplants and bell peppers.
• Add bouquet garni
• Cover the pan with a top and let simmer for 30 mins.

Ready to serve hot or cold !
