   2                    Eggs
                        Salt And Pepper -- to taste
   6                    Veal Cutlets -- beaten & pounded
   1      Cup           Seasoned Bread Crumbs
                        Oil -- for frying
                        Lemon Wedges
                        Parsley Sprigs

In a shallow dish, beat the eggs and add salt and pepper. Dip cutlets
first into beaten eggs, then into bread crumbs to coat well. Heat oil
1 inch deep to 360 F in a large skillet. Fry cutlets on both sides until
golden brown. Drain on paper towels. Garnish with lemon and parsley.

Serve with steamed peas and sauteed whole mushrooms.

Serves 6.
