  Amount  Measure       Ingredient -- Preparation Method

   3      pounds        cleaned fish
                        --any firm-fleshed fish can be used
     1/2  cup           oil
                        --can use vegetable shortening or butter
                        salt to taste
   2      large         onions
   4      large         tomatoes
                        --or 1 cup canned tomatoes, strained
   1      cup           boiling water
                        parsley and/or fresh mint
                        lemon wedges -- optional

Prepare the fish as for broiling. Rub inside and outside with oil and salt ligh
tly.  Broil under low heat turbing when inner side is brown, then brown outer s
ide.  Place the fish in a long baking dish, cover with sliced onions and tomato
es. Sprinkle lightly with salt and bake 20 minutes at 400°F. Then add 1 cup boil
ing water and baste.  Bake 5 to 10 minutes longer. Serve either hot or cold, ga
rnished with parsely and/or fresh mint.  Wedges of lemon may be added.
