                              Cajun Meatloaf

   2      Whole         bay leaves
   1      Tablespoon    salt
   1      Teaspoon      ground cayenne pepper
   1      Teaspoon      black pepper
     1/2  Teaspoon      white pepper
     1/2  Teaspoon      ground cumin
     1/2  Teaspoon      ground nutmeg
   4      Tablespoons   butter -- unsalted
   1      c             onions -- finely chopped
     1/2  c             celery -- finely chopped
     1/2  c             green peppers -- finely chopped
     1/4  c             green onions -- finely chopped
   2      tsp           garlic -- minced
   1      tbsp          Tabasco  sauce
   1      tbsp          Worcestershire sauce
     1/2  c             evaporated milk
     1/2  c             ketchup
   1 1/2  lb            ground beef
     1/2  lb            ground pork
   2                    eggs -- lightly beaten
   1      c             very fine dry bread crumbs

Combine bay leaves, salt, cayenne, black, and white peppers, cumin and
nutmeg. Set aside. Melt butter over medium heat. Add onions, celery, green
onions, garlic, Tabasco  sauce, Worcestershire sauce and combined
seasonings. Saut mixture until it starts sticking excessively, about 6
minutes, stirring occasionally and scraping the bottom well. Stir in milk
and ketchup. Continue cooking about 2 minutes, stirring occasionally. Allow
mixture to cool. In a baking pan, mix ground beef and pork. Add eggs, cooked
vegetable mixture and bread crumbs. Mix by hand until thoroughly combined.
In the center of the pan, shape mixture into loaf. Bake uncovered at 350
for 25 minutes. Raise heat to 400  and continue cooking 35 minutes longer.
