Cabbage Lentil Stew
Tools & Cookware
- Knife and cutting board
- Stirring implement
- Medium pot or high-walled pan
Ingredients
- 2 tbsp canola oil
- 1 medium yellow onion
- 4 cloves garlic
- ¼ head cabbage
- ½ cup lentils (any kind)
- 1 cup vegetable broth
- 3 cups water
- 2 tsp all-purpose flour
- 1 tbsp paprika
- salt and pepper to taste
- balsamic vinegar to taste
Preparation
- Dice the onion
- Peel and slice the cloves of garlic
- Chop the cabbage into long strips
Instructions
- Add the oil to the pot and heat at medium-high heat
- Add the onion and sauté until transparent
- Add the garlic and sauté for 1 minute
- Add the cabbage and sauté for 3-4 minutes
- Add the lentils followed by the water and broth
- Add the flour and paprika and mix well
- Bring to a high simmer/low boil, reduce heat, cover, and simmer for 15-20 minutes or until lentils are tender
- Add 1-2 tbsp of balsamic vinegar and mix in well
Best served with warm crunchy bread.
