A month after my initial go at these amazing cookies I tried again using better techniques and planning. Thanks again to kumquat for the recipe.
The biggest improvement I made this time was converting the dry powder measurements to weights in grams instead of using measuring cups. That drastically improved the texture and moisture of the dough and made forming the balls on the pan so much easier. I also managed to avoid any measurement screw-ups! Go me!
The recipe suggests freezing the dough for 10 minutes before baking to improve shape but my freezer is much too small to accomodate this. They seem to come out looking good regardless.
The results are in and these are utterly perfect, if perhaps a bit large. I don't mind a big cookie, but I want MORE cookies and making them smaller would allow for that. Of course then I'd just eat two. Perhaps it's not a change that's needed anyway.
