Cabbage Lentil Stew

Tools & Cookware

• Knife and cutting board
• Stirring implement
• Medium pot or high-walled pan

Ingredients

• 2 tbsp canola oil
• 1 medium yellow onion
• 4 cloves garlic
• ¼ head cabbage
• ½ cup lentils (any kind)
• 1 cup vegetable broth
• 3 cups water
• 2 tsp all-purpose flour
• 1 tbsp paprika
• salt and pepper to taste
• balsamic vinegar to taste

Preparation

• Dice the onion
• Peel and slice the cloves of garlic
• Chop the cabbage into long strips

Instructions

• Add the oil to the pot and heat at medium-high heat
• Add the onion and sauté until transparent
• Add the garlic and sauté for 1 minute
• Add the cabbage and sauté for 3-4 minutes
• Add the lentils followed by the water and broth
• Add the flour and paprika and mix well
• Bring to a high simmer/low boil, reduce heat, cover, and simmer for 15-20 minutes or until lentils are tender
• Add 1-2 tbsp of balsamic vinegar and mix in well

Best served with warm crunchy bread.
