4/23/2022
I'm decided to track my progress across various sectors on the "boring" parts of my life like cooking, cleaning, exercise, etc.
Cooking:
- I've been incorporating more greens with a bit of variety. I have green juice and applesauce as back up. Kale, spinach and romaine this coming week. I'm putting the kale in a stew/soup kind of dish with rice, mushrooms and cream of mushroom. The spinach I want to fry up with some mushrooms and swiss cheese and put into tortilla to toast. Or maybe I'll make fancy quesadilla.
- Boiling eggs and making no added salt bone broth. It was cheaper making from bones than getting premade. However with chicken broth its the opposite.
- I am getting snacks but am watching the nutrition more, especially less salt. I've managed to get some decent ones.
- I've been sprouting mung beans for two weeks straight!
Future cooking goals:
- Get stuff from the farmer's market. Fresh fruits and veggies!
- Sprout different things.
Cleaning:
- I cleaned up the area near my bed (usually a disaster area). I think I'm about halfway done which is 50% more than the past few years.
- My work desk is pretty clean. I just need to dust it.
Future goals:
- Go through my clothes.
- Make a mail/paper area.
- The kitchen.
Exercising:
- This week I accomplished...
- 5 -> 7 squats
- 5 -> 7 crunches
- 5 -> 7 push ups
- 10 second plank
I keep missing the 10 minute workout goal. The five minute one is depending on how much I clean (I move things around a lot).
My end goal is to do 40 minutes of exercise consistently. I've got a long way to go, but at least I'm trying!

- I made some chicken thighs in a pressure cooker with some basic spices (italian seasoning, garlic powder, black pepper). Super shreddable. I am planning to put it on wraps with a quickly dwindling green salad. Feeling kind of healthy. :)
- I am doing small things consistently like small cleaning or 5 squats and push ups. Finch is such an amazing app and I wouldn't be making these gains without it. It also pushes me to learn 1 new thing daily. I do that anyway buts its good to realize its something I do.

- I tried to make a savory pancake. Simliar to scallion pancake. But using a lot of the mung beans that I recently sprouted. The first attempt seems like something my mom would like so I saved it. The second thing the batter did not properly cook so I tossed it. Then I ate yogurt and granola.
- I think I need to fry the mung beans and scallions first. I might also get some sort of protein to put in there to balance things out like fake crab meat.
- The tip of having snacks to eat so that if cooking experimentation goes wrong has been life changing. Its easier to cook knowing even if I mess it up I will still eat.

- I walked to the closest Little Free Library. I even put in a few books that look nicer and newer than the current selection so they will probably go in about 6 months. XD
- I did not find anything I wanted, but I really enjoyed the walk.
- However after I felt really depressed and napped. I don't know why. :(

- I made a black bean soup kind of thing. It was really good with tortilla chips. I need to really knock the salt down and maybe add some more veggies like corn, tomatoes and peppers but its a really solid base for a basic, filling meal. I have a bunch of tortialla too so I wonder if I could put it in a wrap if I'm not feeling soupish?
