As they are chickpeas are dull. When I was a boy I didn't like legumes at all and they weren't even prepared very often. It wasn't until I became a vegetarian a few years ago that I started tasting them, out of necessity. Among the legumes though, chickpeas are surprising:
- Aquafaba: They work as an egg replacement
- Mashed with olive oil, parsley and lemon (if you have tahini, it's better but you might not have that) you have hummus or chickpea paste
- You can make falafel with mashed chickpeas (chickpea croquettes)
- You can make yogurt
- You can use it to make flour and from there bake bread
Initially I wanted to share a recipe but my ingredients were less than exact.
Just add water and salt to a pot at medium heat. While that pot is getting heated just slice some tomatoes and toss them in the pot. When the water is boiling add some tomato sauce, milk and butter. You can also add chopped onions with some previously stirred mushrooms. Toss the cooked chickpeas, chilli peppers and spice to taste. Leave simmering for 15 minutes.
It's really delicious. Chickpeas do need some spices to taste good but damn. The result is amazing.
