there is an amazing sauce i love to make that is simple.
prepare by squeezing some lemon juice into a bowl. cook butter in a pan until it foams and starts to smell nutty and is a deep gold. saute capers for a very short time until their aroma kicks in. add in the lemon juice and stir frequently until the liquid has reduced by a bit and then you're good to go. you can season with salt and pepper and you could fry garlic before adding the capers if you want and you also add chopped parsley. it goes really good on salmon or pork loin

another easy thing to cook is making kale edible. fry garlic and onions the normal way in a large pan and then put the kale in (and salt and pepper) and constantly stir until it starts to wilt. then add in a small amount of water (i really just eyeball it. something like a quarter cup or so for my 13" pan relatively heaped with kale) and wait for the water to steam away. it leaves the kale somewhat crunchy yet tender and it doesn't have that bitter bite that kale normally does

fun fact about kale, it's basically the most value you'll get for your buck for a leafy green in terms of nutrient per cent. it singlehandedly saved me from developing scurvy when I was in college

@313 Please enlighten me on how best to use kale, (and perhaps similar leafy greens). We get it in a veg box, and haven't made anything really inspiring.

270 has the right idea, I did something similar (without steaming it) and it was perfectly edible. granted I was also poor and depressed at the time so you probably want to follow their advice more than mine. If you start making 3 ingredient kale quiches like I was at the time I sincerely hope you find the help that you deserve

last night i roasted chicken breasts in the oven and halfway through i took them out quickly to coat them in shredded cheese mixed with seasonings before going back in. it came out perfectly melted over and kept the meat super juicy and was 10/10
