Mixed Salad

This salad contains no salad, but it's fresh and fulfilling.

Contains no fat other than the ingredients, so it's good for a long day outside.

Ingredients - serves 4

1 cucumber, diced
1 can of black beans, rinced
125g corn
1 red bell pepper (capsicum)
200g cherry tomatoes
50g fresh coriander, sliced
1 green lemon
1 avocado, diced
salt and pepper to taste

Instructions

Add cucumber, beans, red bell pepper, cherry tomatoes and coriander in a big bowl.
Press the green lemon juice onto the mix
Add the diced avocado
Salt and pepper to taste
