These came out really really good, def the best so far, and it isn't even the recipes final form.
I forgot to get a new jar of molasses so I had to use sugar substitute/sugar. Swerve is decent as far as fake sugar goes, it's just expensive. I've also used up the evaporated milk so back to the original cream cheese. Evaporated milk prob has more vitamins.
Pumpkin protein brownies v2.0
1 can pumpkin
1/3 cup ghee or softened butter
8 oz package softened cream cheese
2 eggs
1 tsp vanilla extract
(Mix these wet ingredients first, then add dry.)
1 cup almond flour
2 tbs swerve
2 tbs brown sugar
1.5 cup protein powder (whatever flavor won't clash with pumpkin)
1.5 tsp salt (1/2 tsp table salt, 1/2 tsp lite salt, 1/2 tsp sea salt)
1/2 tsp baking powder
1/2 tsp baking soda
Spice (whatever combo you want to equal 2-4 tsp)
- pumpkin pie spice
- cinnamon
- ground ginger
- ground clove (not more than 1/4 tsp)
- nutmeg
- tumeric
Topping
1/2 cup pepitos/pumpkin seeds or chopped nuts, toasted with a little swerve and drizzle of honey
Preheat oven to 370deg. Mix the wet ingredients until blended and lump free. Add the dry ingredients, mix. Pour the batter into a greased 9x13 pan. On the stove over med-low heat, toast the pumpkin seeds with sweetener and sprinkle on top of the batter. Put in oven, bake for 25-30 minutes until the top is golden brown and there is no jiggle in the center. Let cool. Cut into 8 large pieces and store in fridge.
I estimate a pan of pumpkin protein brownies costs about $8, not including the protein powder - I think the stuff I have on hand would add $4-5. The almond flour and protein powder are the most expensive ingredients. So that's roughly $13 for 8 servings. Portion size is large but it works well for dividing in half. Eat half for breakfast and the other half as a midday snack.
