Lovely Fudge Test
I recklessly substituted vegan ingredients into a "traditional" fudge recipe. Soy milk and/or plant butter has worked well in any recipe I've tried to date. The marshmallows? Brand is Dandies. Expensive, but gelatin-free and they produce such lovely fudge!!!
The mixture smelled a little toasty toward the end of cooking, and did burn its bottom a bit (became a carbonblack rubbery substance which released in a single, fascinating piece from the pot after two days of soaking).
I was trying to get it to 'soft ball' stage per instructions but looked done at the 'thread' mark, as measured by the candy thermometer.
When I make this again, it'll be a thread test.
