I was really in the mood for some ceviche today. Fortunately, there was the right amount of cod (sushi quality) at hand (just kidding, it was, of course, bought on purpose with having ceviche in mind).
- 500 g cod
- 200 ml lime juice (approx. 4 limes)
- a bunch of cilantro
- 2 red onions
- 200 ml cold water
- 2 teaspoons of salt
- 1 red chili
Put the water in a bowl, add a teaspoon of salt and mix it well. Cut or slice the onions into thin rings, put them in the salty water and let them soak for about 20 minutes.
In the meantime, slice the cod in little chunks (about 1x1x0.5 cm–or simply small chunks) and place them in a flat serving bowl.
Now squeeze the limes, pour the juice into a glass and stir in a teaspoon of salt.
Pour the salty lime juice over the cod and let it marinate for about 15 minutes.
Now seed the chili and cut it into small pieces.
Drain the onions through a sieve and let them drain a little.
Chop the coriander coarsely.
Add the onions, chili and cilantro to the fish and mix well.
Serve with totopos—et voilà , bon appétit!
