🍾 Plum jam hooch

This plum jam aka povidla, aka lektvar, is mostly blended plums with sugar. It's a very natural local traditional food.

Ingredients:

Method:

Mix the jam and sugar in half a litre of the water in a hob, add yeast to serve as nutrients, pour cold water in to cool it down and then pour into a bottle, add more water to top it up. Leaving few inches headroom, labelling and setting off with a loose lid in a warm, dark place.

Conclusion:

There's a ton of bits at the bottom third of the bottle so I syphoned the clear top in one bottle and the bottom in another. Letting the bottom layer freeze for two days and then drip the alcohol out, leaving most of the bits and water behind. It's very nice and I have just started another batch of it.
