🍾 Strawberry jam hard cider
Okay, this honestly surprised me big time. It's jacked and surprisingly strong, the jam didn't leave any disgusting gunk in it, and it tastes just great!
Ingredients per 2l:
- 1.5l of 50% apple juice
- 1/2 jar of strawberry jam (~150g)
- leveled teaspoon of baking yeast
- that's it, my label says nothing about added sugar, so it's none
Method:
- Heat up some of the juice on a hob, dilute the jam and bring to boil. Mix in some of the cold juice to cool it down, pour everything in a fermenting bottle and pitch in the yeast when it's reasonable temperature. Fill the rest with water, leaving some headspace for the first night foam. Put in dark, warm place with loose lid or airlock, if you're fancy.
- When it's fermented, cold crash, so the gunk settles at the bottom, rack and stick in the freezer for two days. Then drip out the good stuff and enjoy. It fits nicely in 70cl bottle.
I'm setting it away in a glass for aging now.
There's no yeasty aftertaste and the jam left some artificial sweetness in, so no back-sweetening is necessary. It's kinda dry but also kinda sweet.
Total price is about 25CZK which is around $1US. I'm calling it a success.
Got another batch from the second half of the juice/jam with a spoon of molasses, that's not quite ready yet, not sure how that'll be.
