The above is a pretty well-reasoned post by Drew. In it he describes an ideal future chat application, which though not mentioned by name seems to rather accurately describe XMPP. Since I rediscovered XMPP a couple years ago and began running my own server, it's basically all my family uses.
With Conversations on Android, I don't see any reason to use a thing like Whatsapp or Signal. Matrix I do use because I do like it as a sort of IRC-like thing that also saves me from actually having to use IRC anymore thanks to its good bridging/integration.
I also still use Delta Chat, but you just can't beat XMPP.
